Mavic Pro - check
Beautiful landscape - check
YouTube/Vimeo Channels -check
Son with interest in it all - check
Video Editor ... still looking

I'm leaning towards FinalCut Pro based on features, price and that we are an Apple family, but would be happy to field suggestions or reviews by any of you on other options.  Look forward to sharing the results when we put some stuff together.

Sounds good and with regards to a video editor then I'm not an Apple man myself and I'm not sure what in depth level you want to do your video editing. I have an action cam and I find Filmora is great (they do a MAC version too) - super easy, lots of templates and add-ons and quick too.
I guess the beauty is you can have a go with trial versions - but I do notice that Filmora also seems to be half the price of FinalCut Pro and you can always go with a yearly subscription if you want to limit your risks/price.
